IOLIS’ (e-oh-lees)

Iolis’ honors the first pizza chefs in old world Italy who were known as “pizzaiolis.” Pizzaioli were responsible for the creation of some of the wonderful pizza pie recipes we still enjoy today.

After originating in Italy, pizza was brought to America in the latter half of the 19th century with migrating Italians. Pizza really took off as a popular American food choice during the 1950’s when Italian-origin celebrities such as Frank Sinatra, Jimmy Durante, and baseball star Joe DiMaggio were often seen devouring it.

IOLIS’ (e-oh-lees) honors the Pizzaioli’s of old, pays tribute to East Coast pies, and bows to the West Coast’s creativity in introducing new flavor fusions.
